Chapter 29 Bonus Video Clip: Preparing Risotto
Chef Draz: Risotto is the name of a traditional Italian rice dish and the cooking method used to create the dish. For risotto, the rice grains are cooked at an active simmer while being stirred and hot, seasoned liquid is continually added in small amounts until the rice is cooked. This cooking process releases the rice's starch creating a dish with a thick creamy consistency. Here's how to prepare risotto. We'll be preparing risotto following the recipe found in the companion materials for The Culinary Professional. Here's our mise en place. 3 pints or 1.5 liters chicken stock 3 ounces or 85 grams butter 2 ounces or 60 grams small diced onion 1 pint or 500 milliliters short grain rice such as Arborio. 3 ounces or 85 grams grated Parmesan cheese Salt and white pepper to taste Bring the stock to a simmer and season it with the salt and white pepper. In a different heavy saucepot, heat 1 ounce of butter. Sweat the onion in butter. Add the rice and coat with the fat. Add a portion of the seasoned stock (1/3 or less of the total volume) to the rice while continuing to stir and cook over moderate heat. Cook until the liquid is absorbed. Continue adding small portions of stock and continue to stir over heat. Continue this process until the rice is tender. Stir in the remaining butter and Parmesan cheese until fully incorporated. Taste for seasoning and adjust if necessary. Serve immediately as risotto becomes too starchy if held. Risotto is a versatile dish and can be flavored in a variety of ways. For instance, risotto can be enhanced with a variety of ingredients such as cheese, mushrooms, herbs and spices, vegetables, ham, shrimp, shellfish, and chicken. The options are seemingly endless. It can be served as an appetizer, a main course, or a side dish. Risotto is usually served immediately after cooking because it does not hold well. Some chefs will partially prepare risotto and complete the cooking process when needed. Risotto is a hearty, tasty dish that is a popular choice with diners.
