Technique: Making Vegetable Cutouts
Vegetable cutouts make attractive garnishes and are simple to prepare.
To prepare vegetable cutouts, begin by selecting the vegetables. Root vegetables, such as turnips, large carrots, beets, and rutabagas work well for this purpose. Allow the vegetables to come to room temperature. If the vegetables are cold, they are difficult to cut and tend to break.
Next, peel the vegetables. Slice the peeled vegetables into quarter-inch thick slices. Place the slice flat on a cutting board. Use a cookie cutter to cut out the desired shape by pressing the cutter onto the vegetable.
Place the cutouts in ice water until needed for service to prevent the slice from drying out.
