Technique: American-Style Omelet
The American-style omelet contains much the same ingredients as a French-style omelet. The two omelets differ in how the ingredients are prepared and the final appearance of the dish.
Omelet ingredients include: beaten eggs; desired additions such as mushrooms, herbs, meat, and vegetables.
To prepare an American-style omelet, heat a small amount of clarified butter in a small nonstick sauteuse. Next, sauté any additional ingredients that may require cooking.
When the additional ingredients are sufficiently cooked, pour the beaten eggs into the sauteuse and stir the mixture. As the eggs begin to coagulate, stop stirring and allow the eggs to form a single sheet. Cook the mixture until lightly browned.
Fold the omelet in half and slide onto the serving plate.
