Technique: Cutting Noodles by Hand
Pasta dough can be made into many different shapes by hand. Perhaps the simplest shape to create is noodles. To cut noodles by hand, start with a manageable amount of pasta dough.
Before working with the dough, sprinkle the work surface with flour. Next, flatten the dough with the heel of your hand. Then use a rolling pin to roll the dough into a thin rectangular sheet. As needed, sprinkle the dough and work surface with flour to prevent the dough from sticking to the rolling pin or work surface.
Once the sheet of dough is approximately one-eighth inch thick, begin at one end of the rectangle and use your hands to loosely roll the dough into a roll or cylinder shape.
Next, use a sharp knife to make one-quarter to one-half inch thick slices across the roll. Cutting the roll of dough in this way forms individual spirals of dough. By unwinding the spirals, noodles are produced. Place the resulting noodles on a sheet pan.
Either cover the noodles and hold until needed for service or cook immediately.
