Technique: Preparing a Bouquet Garni
A bouquet garni is a small bundle of fresh herbs tied to a piece of celery, leek, or carrot that is used for seasoning stocks. The herbs are tied to the piece of vegetable to make removing them from the stock quicker and easier than if they were floating freely in the stock.
To prepare a bouquet garni, cut a piece of celery roughly 3 inches long. Next, position the fresh herbs inside the celery. Place a bay leaf on top of the herbs and celery. Then, tie the bundle with a piece of kitchen twine.
