Technique: Assembly Line
The assembly line technique is used in commercial kitchens to prepare a large number of food items more efficiently than one person can prepare working alone.
Suppose a kitchen needs to prepare 120 ham and cheese sandwiches. This might be broken down into the following tasks: spreading mayonnaise on a piece of bread; placing proportioned ham on the mayonnaise; adding a slice of cheese on the ham; garnishing sandwich with lettuce leaf and tomato slice; spreading mustard on a slice of bread and placing on top of the tomato slice; wrapping the sandwich.
As the sandwich progresses down the assembly line, each cook adds one or two ingredients and passes it on.
By the end of the assembly line, the sandwich is completely constructed. Plates of food for serving a large group the same menu are also prepared using the assembly line technique.
