Emulsions
Some liquids, such as vinegar and water, mix together readily.
Other liquids, such as oil and vinegar, do not mix without assistance. When the two liquids are shaken or whipped, an emulsion is created. An emulsion occurs when tiny droplets of one liquid are suspended in the other liquid. These emulsions are temporary and the two liquids will soon separate again.
Additional ingredients are often added that help stabilize the emulsion and keep the two liquids mixed longer. Ingredients such as eggs and dry mustard are commonly used to add flavor as well as to stabilize the emulsion.
